Papperdelle ala Carbonara
Ingredients
300 grams Fresh or dried Papperdelle Pasta
1 Egg Yolk
1 Clove Garlic finely chopped
1 Tbs Olive Oil
1 Small Carton Double Cream
1 Rasher Un-smoked Back Bacon
Salt and Ground Black Pepper
1 Tbs Grated Parmesan Cheese
Method
- First cook the pasta in boiling water with a good pinch of salt and stir occasionally to stop the pasta from sticking together.
- Meanwhile make the sauce, take your bacon and remove the fat, slice it into fine strips and set aside.
- In your frying pan add the olive oil and garlic, heat slightly and add your sliced bacon and cook for a few minutes or until slightly brown.
- Now add your cream and start to swirl and reduce the sauce, add a pinch of salt and pepper set to one side.
- Check the pasta and when it still has a slight bite to it (al dente) strain into a colander and while still hot add to the sauce and toss until everything is well coated. Next add your egg yolk and cook for a minute. Then the grated parmesan and toss together again. Check for seasoning and serve.
