Papperdelle ala Carbonara

 

Ingredients

 

300 grams Fresh or dried Papperdelle Pasta

1 Egg Yolk

1 Clove Garlic finely chopped

1 Tbs Olive Oil

1 Small Carton Double Cream

1 Rasher Un-smoked Back Bacon

Salt and Ground Black Pepper

1 Tbs Grated Parmesan Cheese

 

Method

 

  1. First cook the pasta in boiling water with a good pinch of salt and stir occasionally to stop the pasta from sticking together.
  2. Meanwhile make the sauce, take your bacon and remove the fat, slice it into fine strips and set aside.
  3. In your frying pan add the olive oil and garlic, heat slightly and add your sliced bacon and cook for a few minutes or until slightly brown.
  4. Now add your cream and start to swirl and reduce the sauce, add a pinch of salt and pepper set to one side.
  5. Check the pasta and when it still has a slight bite to it (al dente) strain into a colander and while still hot add to the sauce and toss until everything is well coated.  Next add your egg yolk and cook for a minute.  Then the grated parmesan and toss together again.  Check for seasoning and serve.
